Home Made Burgers

Ingredients:

  • 1 pound of lean minced beef, turkey or lamb
  • 1 egg lightly beaten
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of worcestershire sauce
  • 1 small portobello mushroom (fits in one hand) chopped finely
  • 1 large red pepper chopped finely
  • 1 large onion chopped finely
  • 4-6 large cloves of garlic chopped finely
  • fresh or dried chili to taste (if using lamb, you can afford to use slightly more as the fat counter acts the spice a little)
  • freshly ground black pepper
  • a tablespoon of dried basel
  • a half tablespoon of dried sage OR if using minced lamb a tablespoon of fresh chopped mint leaves

Method:

  • take off your rings, clean your hands very well
  • put all ingredients into a large mixing bowl and literally mush everything together until well mixed
  • make a large flattened round with the mix
  • take a butter knife and cut it into 8ths
  • take each piece and roll into a tight ball
  • flatten but keep pressing the edges in to avoid cracks
  • when well and firmly shaped, place on a large plate or into a freezer bag depending on whether you are cooking them now or later
  • you should get 6 large or 8 regular burgers out of the mix
  • fry or grill (grilling is better for you!)
  • when cooking, take care not to break the burgers apart – this can happen if they are flipped too soon, or pressed too often – if they do fall apart, it doesn’t really matter, don’t freak out, they’ll still taste really good

Final preparation:

  • when almost ready melt some thin slices of your cheese of choice on top
  • and if using burger buns: add some thinly sliced pickles, some fresh crisp lettuce and thinly sliced vine tomato
  • recommended condiments: tomato relish, chili ketchup, or mustard mayonnaise (make yourself using low fat mayonnaise)

Notes for weight losers:

  • eat only one
  • don’t bother with the bun, have a potato and salad instead
  • grill don’t fry (easier to melt cheese this way anyway)
  • use low fat products (cheese, etc.) and as sparingly as you can
  • take care that the center is cooked well (don’t cook at too high a temperature)
